There seems to be an understood belief that in general, pancakes are unhealthy. However, I am here to tell you that they don’t have to be! The reason why pancakes are considered to be unhealthy is because of the ingredients in them, and the fake, sugar loaded pancake syrup that they’re topped with is unhealthy. BUT!!!!! If you make homemade pancakes (or use a really good pancake mix, like me), and only use 100% real maple syrup instead of that fake flavored sugar syrup garbage, your pancakes can actually be NUTRITIOUS (and delicious)!! Here’s how I made these bad boys below!
Easy Collagen Protein Pancakes
1 cup of Kodiak Cakes Whole Wheat Oat & Honey Flapjack Mix (or you can use other healthy brands like Hodgson Mill Buckwheat Pancake Mix, Bob’s Red Mill Organic 7-Grain Pancake Mix, Arrowhead Mills Organic Sprouted Grain Pancake Mix, and just follow the instructions on the box)
1/2 cup of water
1/2 cup of organic soy or almond milk
1-2 tsp. of Maca Powder
1-2 scoop(s) of Further Food Collagen Peptides (use code MELISSA10 for 10% your order!)
A few shakes of cinnamon
Combine all ingredients in a medium bowl, heat a large pan over medium heat and spray with oil of choice. Ladle or pour 1/4 to 1/2 cup of batter into the hot pan (depending on how big you want the pancakes), and allow to cook until you can see “pores” in the pancakes and then flip.
